I had my first failure today. The buckwheat polenta was just not happening for me and I wasn’t going to force myself to eat something that terrible. NOPE to gray gruel. At least my breakfast was good.

This kept well in the fridge. The cranberries bled but this is a good recipe to make in advance if you meal plan for the week

Baby Bok Choy Stir Fry

This was simple but good. I used non-baby bok choy but otherwise followed the recipe. Bok choy is sauteed in coconut oil with ginger, onions, turmeric and cumin. You could really taste the peppery flavor of the bok choy in this recipe.  I need to cook with bok choy more.

Dinner

I couldn’t deal with this. It was gray gruel. I just couldn’t eat it and I am not trying to punish myself here. I had some fruit and nuts instead as I did not feel like cooking again.
