On to week 2! Since I had some of the pantry items from week 1 already purchased my shopping list for this week was not as long (or expensive).

Breakfast

Tropical Green Smoothie

I had fresh ginger this time and added 1 tablespoon of honey into the blender and the smoothie was much better than last week! So far a good start to week 2.

Lunch

I did not attempt to fix up the tasteless Butternut squash soup from yesterday as I think it was really a lost cause. I replaced it with a bowl of Whitefish Chowder I had leftover in the freezer.

Dinner

Coconut Chicken Curry

This was edible I suppose. Chicken thighs cooked in coconut milk, curry powder, and swiss chard (I used kale instead). The only suggestion I would make is the recipe also calls for water on top of the coconut milk and it just made the dish sit in a puddle of water-y coconut milk. I would skip the water maybe that would help.
