After yesterday’s disaster I was hoping today would be a better day. Breakfast seemed promising as it was a baked grain and fruit concoction. It did take some foresight though as the millet needs to soak overnight and the baking takes nearly one hour so I wanted to bake it the night before.

The Anti-Inflammatory Diet in 21 Review: Week 1 Day 2

Yesterday went pretty good except for the coffee I was not supposed to have but..baby steps. Still a vast improvement as I would have probably eaten some refined carbs instead of bananas and nuts as a snack so I won’t beat myself up. Today’s menu involved much less prep than yesterday which was nice. Avocado toast for breakfast, leftover pasta for lunch, so all I really had to do was prepare the Whitefish Chowder for dinner.

Hot and Spicy Seafood Dip

Usually if I am going to make a dip for people to snack on I go with onion dip, salsa or guacamole. But I had an octopus sitting in my fridge staring at me. My parents saw pre-cooked Octopus at Costco and wanted to know if it was any good so they gave it to me to play with. I really was reluctant to use it because I thought it would be gross but it was surprisingly not fishy, not slimy (once rinsed), and not rubbery. Who would have thunk. In addition to the octopus I used surimi (“krab”). I know surimi has a bad reputation because it is marketed as “fake crab” but I like it. You just need to buy a decent quality and enjoy it for what it is – fish sticks and not expect crab.
