Although I had a few complaints about the recipes and level of mushiness I did not hate these past two weeks. I discovered half a dozen or more recipes that I would keep in my repertoire, gained a new appreciation for smoothies, and really broke in my vitamix. I also ate way more vegetables than I usually would and significantly cut down on my consumption of processed junk. But unfortunately, I will have to take a hiatus from the book as my time off from work has come to an end and my schedule became very tight and I am not ready to work and do all this cooking/meal planning. Today is the 4th of July and I did a BBQ for dinner so the Homemade Avocado Sushi will have to be skipped until another time so today’s post will not be that new or interesting.
Yesterday was pretty successful recipe wise and so was today! Things are looking up.
Yesterday I may have fallen off the wagon and ate
bad delicious foods…but today I got back on and I am glad I did because otherwise I would have never discovered make your own cup of noodles.
I have been super excited to make this oatmeal. I love tahini and I was really excited to use it in a different way. It did not disappoint. I can’t believe I didn’t think of this before.
On to week 2! Since I had some of the pantry items from week 1 already purchased my shopping list for this week was not as long (or expensive).
Today ends week 1. I am not sure if I feel any different but I have eaten a lot of vegetables so that is a plus. I have also re-discovered bok choy and was introduced to millet and rice paper wraps – things I plan on using more. So all in all a productive week.
